One interesting flavor for cookies would be lemon. Lemon is a refreshingly interesting flavor for cookies. Below are 2 cookie recipes that have Lemon as their base flavor. Lemon Snaps Ingredients: 1/3 c unsalted butter 2 eggs 1 c sugar 3 tbsps lemon juice 1.5 tsp lemon extract 3.5 c flour 2.5 tsps baking powder 1/4  tsp baking soda A tsp of lemon peels A few gratings of whole nutmeg 1/2 tsp salt Sugar (to coat) Directions: Oven should be preheated to around 375 deg. F. Cream butter and sugar together and beat in eggs.  Add lemon juice and extract. Mix dry ingredients and stir in until well blended. Roll dough between hands to form walnut sized balls.  Roll in sugar and place them on cookie/baking sheet that is covered with silpat.  Bake for about 10 minutes.  Remove from oven then gently press down tops while cookies are warm. Makes 4 dozen. Lemon Ricotta Cookies with Lemon Glaze Ingredients: Cookies: 2.5 c flour (all-purpose) 1 tsp of baking powder 1 tsp of salt 2 c of sugar A stick of unsalted butter, softened 1 lemon, zested 2 eggs 1 (15-ounce) container whole milk ricotta cheese 3 tbsps lemon juices Glaze: 3 tbsps lemon juice 1.5 c sugar (powdered) 1 lemon, zested Directions: Preheat your oven at 375 degrees F. Cookies: Into a medium bowl mix flour, baking powder, and salt. Set aside. Into another bowl mix the butter and the sugar. Using your electric hand held mixer beat the butter and sugar until it is light and fluffy, about 3 mins. Next, add eggs, 1 at a time, beating until incorporated. Then, stir in ricotta cheese, lemon juice lemon zest. Beat to combine. Stir in your dry ingredients. Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) on your baking sheets. Bake for 15 mins., until slightly golden at its edges. Remove from your oven let the cookies rest on the baking sheet for 20 minutes. Glaze: Combine sugar (powdered), lemon juice lemon zest inside a small bowl and stir until it is smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of your spoon to gently spread. Let glaze harden for 2 hours. Pack the cookies into a decorative container.
