Spicy Pumpkin Seeds

Spicy Pumpkin Seeds are deliciously addictive! Make a double or triple batch to have on hand for nibbling. Try your hand on cooking Spicy Pumpkin Seeds for you and your family this halloween and see the wonders of this snack. Makes about 1/2 cup: Ingredients:- 1 garlic clove, minced 1 tablespoon olive oil 2 teaspoons cummin 1 teaspoon sweet paprika 1/2 teaspoon cayenne pepper 1/2 cup shelled unsalted pumpkin seeds (pepitas)* 1 teaspoon coarse (kosher) salt Step 1: Preheat the oven to 400 degrees. In a small skillet, cook the garlic in the oil over low heat for about 5 minutes without browning. Strain the oil through a fine sieve and discard the garlic. Return the garlic-flavored oil to the skillet and add the cumin, paprika and cayenne. Cook over low heat, stirring occassionally, until fragrant for about one minute. Step 2: Place the pumpkin seeds on a baking sheet. Scrape the spice mixture over the seeds, sprinkle with the salt and toss to coat evenly. Spread the seeds in a single layer and bake in the oven for about 5 minutes or until they turn light brown. The seeds will pop up and dance while cooking. Store the seeds in an airtight container to maintain taste and crisp. Preparation time should not be more than 45 minutes. * Available with Latin American markets and health food section of the grocery stores.
